Tiny gray-green leaves, a woody, low-growing habit, and a warm, earthy aroma make English thyme the backbone of stocks, roasts, and pan sauces. It is a tough, sun-loving herb that thrives in gritty soil, rock gardens, and containers, and it produces clouds of pale pink flowers that bees love in early summer. We grow ours in the Portland greenhouse without synthetic pesticides. It is hardy in zones 5–9, needs little water once established, and is safe for cats and dogs.
